- 1 pound cod loins or fillets
- 1/4 cup all purpose flour
- 2 large eggs, beaten
- 1 1/2 cups panko breadcrumbs
- 1 1/2 teaspoons salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- Olive oil spray
Instructions
- Cut the cod into 6-8 portions.
- In three separate bowls, combine flour with half of the seasonings, whisk the eggs, and mix panko breadcrumbs with the remaining seasonings.
- Dredge each cod portion first in the seasoned flour, then dip in the beaten eggs, and finally coat thoroughly with the seasoned panko breadcrumbs. Press breadcrumbs onto the fish to ensure adherence.
- Preheat your air fryer to 400°F (200°C).
- Arrange the breaded cod in a single layer in the air fryer basket. Lightly spray with olive oil.
- Air fry for 8-10 minutes, flipping the fish halfway through at the 5-minute mark. Spray with additional olive oil if desired.
- The cod is ready when it reaches an internal temperature of 145°F (63°C).
Notes
- Leftover air fryer cod can be stored in an airtight container in the refrigerator for up to 2 days.
- To reheat, place leftovers in the air fryer at 350°F (175°C) for 5-7 minutes, or until heated through. Alternatively, reheat in an oven at 350°F or in a skillet over medium heat.
- Consider serving with your favorite dipping sauces such as pesto aioli, horseradish sauce, or tartar sauce.
