Description

Apple Cheesecake Bars combine the flavors of apple crumble and cheesecake in a delicious dessert.


Ingredients

  • 1½ cups (164g) graham cracker crumbs
  • 2 tablespoons granulated sugar
  • ¼ teaspoon ground cinnamon
  • 1 tablespoon all purpose flour

  • 6 tablespoons (85g) unsalted butter (melted and cooled slightly)
  • ½ cup plus one tablespoon (77g) all purpose flour (spooned and leveled or weighed)
  • ¼ cup (50g) granulated sugar
  • 2 tablespoons brown sugar (packed)
  • ¾ teaspoon ground cinnamon
  • couple pinches of salt
  • 4 tablespoons (56g) unsalted butter (melted and cooled slightly)
  • 2 cups (260g) peeled, diced apples
  • 2 tablespoons brown sugar (packed)
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • Two 8-oz packages brick style cream cheese (softened)
  • ¾ cup (150g) granulated sugar
  • ¼ cup (63g) sour cream (room temperature)
  • 1½ teaspoons pure vanilla extract
  • 2 large eggs (room temperature)
  • toffee sauce or caramel sauce

Instructions

  1. Preheat oven to 325°F with a rack in the middle position. Prepare an 8×8 baking pan by greasing it well or lining it with parchment paper or foil. Set aside.
  2. Stir together the graham cracker crumbs, sugar, cinnamon, flour, and salt. Add the melted butter and stir until all of the crumbs are moist. Press the mixture into an even layer in the bottom of the prepared pan.
  3. Bake for 12-14 minutes, until fragrant and just beginning to brown. Meanwhile, proceed with the recipe.
  4. Combine flour, both sugars, cinnamon, and salt. Add the melted butter and stir until well combined. Chill the topping mixture in the refrigerator.
  5. Stir together all filling ingredients and set aside.
  6. Using a mixer, beat the cream cheese until smooth. Gradually add sugar, then sour cream and vanilla. Add eggs one at a time, mixing until just combined.
  7. Pour filling over crust and smooth into an even layer. Spoon the apples over the cheesecake filling, leaving behind any excess juice. Sprinkle chilled crumb topping over the apples.
  8. Bake for 40-50 minutes, until the topping is light golden brown and the center has a slight jiggle. Cool on a wire rack for at least an hour, then refrigerate for at least 6 hours. Serve chilled with toffee or caramel sauce.
