Description

Cozy Apple Cinnamon Oatmeal Cookies for Fall Bliss

Ingredients

Scale
  • 0.5 cups Butter (room temperature)
  • 1 cup Brown Sugar (dark brown enhances the flavor)
  • 1 large Egg (substitute with a flax egg for vegan)
  • 1 teaspoon Vanilla Extract (almond extract for a twist)
  • 1.5 cups All-Purpose Flour (gluten-free flour can be used)
  • 1 cup Old-Fashioned Rolled Oats (instant oats will alter texture)
  • 1 teaspoon Ground Cinnamon (nutmeg can elevate flavor)
  • 0.5 teaspoon Baking Soda (use baking powder if needed)
  • 0.25 teaspoon Ground Cloves (optional for milder taste)
  • 0.5 teaspoon Salt (sea salt enhances flavor)
  • 1 cup Peeled and Chopped Apples (Granny Smith or any firm apple)
  • 1 tablespoon Lemon Juice (substitute with orange juice if desired)
  • 1 cup Powdered Sugar (coconut sugar for less processed option)
  • 23 tablespoons Milk (non-dairy milk substitute works well)
  • 2 tablespoons Maple Syrup (honey or agave syrup are good alternates)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, beat together ½ cup of butter and 1 cup of brown sugar until light and fluffy.
  3. Add 1 egg and 1 teaspoon of vanilla extract; beat until well combined.
  4. In a separate bowl, whisk together 1.5 cups of flour, 1 cup of oats, 1 teaspoon of cinnamon, ½ teaspoon of baking soda, ¼ teaspoon of cloves, and ½ teaspoon of salt.
  5. Gradually add the dry mixture to the wet mixture.
  6. Toss 1 cup of chopped apples with 1 tablespoon of lemon juice, then fold into the cookie dough.
  7. Drop portions of dough onto the prepared baking sheets and lightly flatten each mound.
  8. Bake for 12 to 14 minutes until edges are lightly golden; cool for 5 to 10 minutes before transferring to wire racks.
  9. Whisk together 1 cup of powdered sugar, 2-3 tablespoons of milk, and 2 tablespoons of maple syrup until smooth for the glaze.
  10. Drizzle the glaze over cooled cookies and allow to set before serving.

Notes

  • Aim for a drizzleable glaze; if too thick, add more milk.

  • For longer storage, refrigerate cookies for up to a week.
  • Freeze cookies for up to 3 months; reheat for a fresh taste.
