Delicious Autumn Sausage Pasta Squash


Ingredients

  • 1 pound Italian-style chicken sausage, casings removed
  • 1 medium butternut squash, peeled, seeded, and cubed
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried sage
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 pound pasta (penne, rotini, or farfalle work well)
  • 4 cups chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Toss squash with 1 tablespoon of olive oil, salt, and pepper. Roast for 20-25 minutes, until tender.
  2. Cook pasta according to package directions; drain and set aside.
  3. Heat remaining olive oil in a large pot. Add sausage and cook until browned.
  4. Add onion and cook until softened, about 5 minutes. Add garlic, sage, thyme, and red pepper flakes; cook 1 minute.
  5. Pour in chicken broth and bring to a simmer, scraping up browned bits.
  6. Add cooked pasta and roasted squash; stir to combine.
  7. Stir in Parmesan cheese until melted. Season with salt and pepper.
  8. Serve immediately, garnished with fresh parsley.
