Description

Sweet, cinnamon-spiced snacks for quick energy on the go, made with wholesome oats, almond butter, and chia seeds.

Ingredients

Scale
  • 2 cups (180g) rolled oats
  • 1 cup (240g) almond butter
  • 1/2 cup (120ml) honey or maple syrup
  • 1 tsp vanilla extract
  • 1 tbsp chia seeds
  • 2 tsp cinnamon
  • 1 tbsp sugar (for rolling)

Instructions

  1. In a large bowl, mix rolled oats, almond butter, honey or maple syrup, vanilla extract, chia seeds, and 1 teaspoon of cinnamon. Stir until well combined.
  2. If the mixture is too sticky, chill for 20 minutes to firm up.
  3. Wet your hands slightly to prevent sticking while rolling. Roll the mixture into 1-inch balls.
  4. In a small bowl, mix the remaining 1 teaspoon of cinnamon and 1 tablespoon of sugar.
  5. Lightly roll each ball in the cinnamon-sugar mixture until evenly coated.
  6. Store the finished bites in an airtight container in the refrigerator.
