Creamy Baked Feta Eggs Recipe for a Cozy Mediterranean Brunch


Ingredients

Scale
  • 2 cups Cherry or Grape Tomatoes (Can substitute with diced regular tomatoes)
  • 1 medium Red Bell Pepper (Green bell pepper can also be used)
  • 1 medium Red Onion (Yellow or white onion can be used)
  • 3 cloves Garlic (Both fresh and powder versions work)
  • 8 oz Feta Cheese (Goat cheese can be used as an alternative)
  • 2 tbsp Olive Oil (Any neutral oil can be substituted)
  • 1 tbsp Dried Oregano (Can be replaced with Italian seasoning)
  • 1 tsp Sea Salt (Regular table salt will suffice)
  • 1 tsp Dried Thyme (Fresh thyme is a wonderful substitute)
  • 1 tsp Black Pepper
  • 1/4 tsp Red Pepper Flakes (Omit if you prefer milder)
  • 4 cups Baby Spinach (Kale or Swiss chard can be used)
  • 4 large Large Eggs (Can replace with egg whites)
  • 1/4 cup Fresh Herbs/Chives (Optional) (Parsley or dill can also elevate the dish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. If using individual ramekins, divide the cherry tomatoes, red bell pepper, red onion, garlic, and feta cheese evenly among four dishes. For a large baking dish, combine all ingredients and place the feta in the center. Drizzle with olive oil.
  3. Mix the dried oregano, sea salt, dried thyme, black pepper, and red pepper flakes in a bowl. Sprinkle this over the feta and vegetables.
  4. Place your ramekins or large dish on a baking sheet and bake for 25 minutes, until the tomatoes are blistered and the feta is golden on top.
  5. Carefully stir the mixture and fold in the fresh baby spinach.
  6. Create small wells in the mixture for the eggs and crack them into each well.
  7. Return to the oven for an additional 10 minutes, until the egg whites are set.
  8. Remove from the oven, let cool slightly and sprinkle with optional herbs or chives before serving.
