- 1 tablespoon avocado oil or olive oil
- 1 pound lean ground beef (90/10 or 93/7)
- 8 ounces cremini or button mushrooms, sliced
- ½ medium onion, diced (about ¾ cup)
- 3 cloves garlic, minced (about 1 tablespoon)
- ¼ teaspoon salt (more to taste)
- ¼ teaspoon black pepper (more to taste)
- 2 tablespoons all-purpose flour
- 2 teaspoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 cup low-sodium beef broth
- ½ cup full-fat sour cream
- 1 ½ cups egg noodles, uncooked
- Fresh parsley, minced (optional for garnish)
Instructions
- Heat the oil in a large skillet over medium heat. Add the ground beef and brown for about 5 minutes.
- Add mushrooms, onions, garlic, salt, and pepper to the skillet, and cook for another 5-7 minutes until the onions are translucent.
- Sprinkle flour over the beef and veggies, mixing well.
- Add Worcestershire sauce, Dijon mustard, and beef broth, stirring until everything is combined and simmer for about 3-4 minutes until thickened.
- Remove from heat and stir in sour cream. Let sit for 5-10 minutes to thicken further.
- Toss the beef mixture with cooked egg noodles or serve stroganoff over noodles.
- Garnish with parsley, adjust seasoning, and serve.
