- 1 cup old-fashioned rolled oats
- 1 cup almond milk
- 1/2 cup coconut yogurt
- 2 tablespoons chia seeds
- 2 cups fresh blueberries
- 2 tablespoons pure maple syrup
- 1 teaspoon lemon zest
- 1/4 cup granola
Instructions
- In a medium bowl or jar, mix together the old-fashioned rolled oats, almond milk, and coconut yogurt. Stir in chia seeds until well combined. Cover tightly and refrigerate overnight.
- The next day, prepare the blueberry chia compote by adding fresh blueberries, chia seeds, and pure maple syrup to a small saucepan. Cook over low heat for about 10 minutes, stirring occasionally until thickened.
- Once the compote has cooled, layer the creamy oats with the blueberry chia compote. Top with granola and extra fresh blueberries.
- If you have leftovers, cover and store in the refrigerator for up to three days.
