  • 2 tablespoons Lemon Zest (Optimal flavor from fresh lemons.)
  • 2 tablespoons Unsalted Butter (Can be omitted for a vegan version.)
  • 1 cup Whipped Cream (To complement the custard.)
  • 2 Lemon Slices (For decoration.)
  • 1 sprig Mint (For color and flavor.)

Instructions

  1. In a medium saucepan, combine 4 egg yolks, ½ cup of granulated sugar, 2 tablespoons of cornstarch, and a pinch of salt. Whisk until smooth.
  2. Slowly whisk in 2 cups of whole milk to the egg mixture until well combined.
  3. Place the saucepan over medium heat, stirring continuously for about 5 to 8 minutes until the custard thickens.
  4. Remove from heat and stir in ⅓ cup of fresh lemon juice, the zest of 2 lemons, and 2 tablespoons of unsalted butter.
  5. Pour the custard into serving dishes and cover with plastic wrap to chill for at least 2 hours.
