Ingredients

  • 1/2 cup unsalted butter (browned)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 large bananas (very ripe, mashed)
  • 2 cups all purpose flour
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon salt

Instructions

  1. Preheat oven to 350° F.
  2. Brown the butter over medium heat in a small, light colored saucepan.
  3. In a large bowl, combine browned butter and granulated sugar; mix well.
  4. Add eggs and vanilla extract; mix until eggs are completely incorporated.
  5. Mix in mashed bananas.
  6. Add flour, baking powder, and salt. Mix until dry ingredients are incorporated. Batter will be lumpy.
  7. Pour into greased & floured 9-inch loaf pan.
  8. Bake at 350° for 60-70 minutes, until top is golden brown and toothpick inserted in the center comes out clean.
  9. Transfer to a wire rack to cool for 15 minutes, then gently remove from pan to cool completely.
