  • 6 cups green cabbage, thinly shredded
  • 2 cups deli ham, diced into 1/2-inch cubes
  • 2 medium carrots, shredded
  • 1/4 cup red onion, thinly sliced
  • 3/4 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon granulated sugar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Remove the core from the cabbage and slice it into thin shreds. Put them in your large mixing bowl.
  2. Shred carrots using a box grater or food processor. Then slice red onion into thin half-moon pieces.
  3. Dice deli ham into uniform half-inch cubes. Add ham to the bowl with the prepared vegetables.
  4. Whisk together mayonnaise, apple cider vinegar, sugar, Dijon mustard, salt, and pepper until smooth and combined.
  5. Pour the prepared dressing over the cabbage mixture. Toss everything together until evenly coated throughout the salad.
  6. Cover the bowl and refrigerate for 30 minutes before serving. This lets flavors develop and blend together.
  7. Garnish with fresh chopped parsley if you want. Serve chilled as a side dish or light meal.
  8. Store any leftovers in a sealed container in the refrigerator. It keeps for up to 4 days.
