Ingredients

  • 1 tablespoon Olive Oil (or vegetable oil)
  • 1 medium Onion (can substitute with green onions)
  • 2 cloves Garlic (minced, or use garlic powder)
  • 10.5 ounces Cream of Mushroom Soup (or homemade cream sauce)
  • 10.5 ounces Cream of Chicken Soup (can use different cream soup)
  • 1 cup Milk (almond or soy milk for dairy-free)
  • 1 cup Parmesan Cheese (nutritional yeast for dairy-free)
  • 1 cup Heavy Cream (coconut cream for dairy-free)
  • 32 ounces Tater Tots (or sweet potato/cauliflower tots)
  • 1 cup Mozzarella Cheese (or cheddar/vegan cheese)
  • 1 cup Cheddar Cheese (optional, adjust to taste)
  • 1 tablespoon Fresh Parsley (or dried parsley)
  • to taste Black Pepper
  • to taste Salt (reduce for lower sodium diets)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the chicken breasts into bite-sized pieces and sauté in olive oil for 6-8 minutes until golden.
  3. Add chopped onion to the skillet and sauté for 3-4 minutes, then add minced garlic and cook for 1-2 minutes.
  4. Stir in both cream soups and milk. Simmer for 5-7 minutes, then add parmesan cheese.
  5. Combine the cooked chicken with the sauce, heating it through.
  6. Spread half of the mixture in a greased baking dish, layer with the remaining sauce.
  7. Arrange tater tots in a single layer on top and sprinkle with optional cheddar cheese.
  8. Bake for 20-25 minutes until tater tots are golden brown and crispy.
  9. Let rest for about 10 minutes before serving.
