- 2 pieces Boneless, skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 12 ounces Rotini pasta
- 2 tablespoons Olive oil
- 1 tablespoon Butter
- 3 cloves Fresh garlic, minced
- 1 cup Heavy cream
- 1 cup Chicken broth
- 1 cup Mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1/2 cup Cheddar cheese, shredded
- 1 teaspoon Garlic powder (optional)
- 1 teaspoon Onion powder (optional)
- Salt & pepper to taste
- 2 tablespoons Fresh parsley, chopped
Instructions
- Heat a large skillet over medium heat and add a drizzle of olive oil.
- Season bite-sized chicken chunks with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
- Sauté the chicken in the hot skillet for 5-7 minutes until golden brown and fully cooked. Remove the chicken from the skillet and set it aside.
- In the same skillet, melt butter and sauté minced garlic for about 1 minute until fragrant.
- Pour in heavy cream and chicken broth, stirring well to combine, bringing to a gentle simmer.
- Gradually add mozzarella, Parmesan, and cheddar cheeses, stirring until melted and the sauce is smooth.
- Cook rotini pasta in salted boiling water according to package instructions until al dente. Reserve ½ cup of pasta water, then drain the rotini.
- Add the drained rotini to the cheese sauce in the skillet, tossing gently to coat each piece. If the sauce is too thick, gradually incorporate reserved pasta water until the desired consistency is achieved for your chicken rotini skillet.
- Return the sautéed chicken to the skillet and mix it gently with the pasta and sauce. Heat everything through for 2-3 minutes.
