Description

Ingredients

  • 1 head cauliflower, cut into florets
  • 2 tablespoons olive oil

  • 1 can (15 oz / 425g) chickpeas, drained and rinsed
  • 1/2 cup (75g) red onion, finely diced
  • 1/4 cup (15g) fresh parsley, chopped
  • 1/4 cup (15g) fresh mint, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place cauliflower florets on a baking sheet and drizzle with 2 tablespoons olive oil. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Toss to coat evenly.
  3. Roast the cauliflower for 20-25 minutes, flipping halfway through, until golden brown and tender. Remove from oven and let cool slightly.
  4. While cauliflower is roasting, prepare the dressing by whisking together 3 tablespoons olive oil, lemon juice, minced garlic, Dijon mustard, 1/2 teaspoon salt, and 1/4 teaspoon black pepper in a small bowl.
  5. In a large mixing bowl, combine the roasted cauliflower, chickpeas, red onion, parsley, and mint.
  6. Pour the dressing over the salad and toss gently to combine all ingredients.
  7. Let the salad sit for 10 minutes to allow flavors to meld together before serving.
  8. Serve at room temperature or chilled.
