A rich, decadent chocolate cake layered with creamy Oreo frosting and topped with crushed Oreos.

- 3 cups powdered sugar (sifted)
- ⅓ teaspoon kosher salt
- ¼ cup heavy cream (cold)
- 4 pieces Oreo cookies (crushed for frosting)
- 1 cup heavy cream (for whipped topping)
- ¼ cup powdered sugar (for whipped topping)
- 1 teaspoon vanilla extract (for whipped topping)
Instructions
- Preheat oven to 180°C (350°F). Line two 8-inch cake pans with parchment paper.
- In a large bowl, whisk together eggs, granulated sugar, vegetable oil, buttermilk, vanilla extract, and kosher salt until smooth.
- Sift in cocoa powder and whisk until no lumps remain.
- Sift in flour, baking powder, and baking soda, folding gently until combined.
- Add hot coffee and mix until smooth.
- Divide the batter evenly between the prepared pans and bake for 25 to 30 minutes, until a toothpick comes out with a few moist crumbs.
- Cool the cakes for 10 minutes in the pans, then transfer to wire racks to cool completely.
- For the frosting, beat butter until light and fluffy, then add vanilla extract and kosher salt. Gradually mix in powdered sugar, then fold in crushed Oreos and heavy cream until smooth.
- For the whipped topping, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Assemble the cake by spreading frosting between layers and coating the top and sides with the remaining frosting. Pipe whipped cream around edges and garnish with crushed Oreos.
