Description
Cinnamon Roll French Toast Casserole combines cinnamon rolls and French toast for a delicious brunch dish.

- 2 cans (approx. 20 oz / 570g total) Cinnamon Rolls, with icing
- 1/2 cup (113g) Butter, melted
- 1/3 cup (67g) Granulated Sugar
- 2 large Eggs
- 3/4 cup (180ml) Heavy Whipping Cream (or half & half)
- 3 tsp Ground Cinnamon
- 1/4 tsp Ground Nutmeg
- 2 tsp Vanilla Extract
- 1/2 cup (50g) Chopped Pecans
Instructions
- Preheat oven to 350˚F (175˚C) and grease a 9×12 inch casserole dish. In a large glass bowl, melt butter, then whisk in sugar. Beat in eggs, heavy whipping cream, cinnamon, nutmeg, and vanilla extract until smooth.
- Slice each cinnamon roll into quarters. Add pieces to the egg mixture and toss to coat thoroughly. Pour coated pieces into the greased casserole dish, spreading evenly. Pour any leftover egg mixture over the top.
- Sprinkle chopped pecans over the casserole. Bake on a low rack for 35-40 minutes, or until golden brown and a toothpick inserted comes out mostly clean. For a moist interior, bake for about 35 minutes.
- Remove from oven. Warm icing from cinnamon roll packages in the microwave for 15 seconds; pour evenly over the warm casserole. Serve immediately.
