- 2 chicken breasts
- 1 cup panko breadcrumbs
- 1 cup marinara sauce
- 1 cup cottage cheese
- 1 cup mozzarella cheese, shredded
- 1 tsp Italian seasoning
- 1 egg
- Oil for frying
Instructions
- Flatten chicken breasts to about ½ inch thick using a meat mallet.
- Set up a breading station with beaten egg in one bowl and panko breadcrumbs mixed with Italian seasoning in another.
- Dip each chicken breast in egg wash and coat with panko mixture.
- Heat oil in a skillet and sear the breaded chicken for 4-5 minutes on each side until golden brown.
- In a baking dish, layer half of the marinara sauce followed by cooked chicken, cottage cheese, remaining sauce, and top with mozzarella cheese.
- Bake in a preheated oven at 375°F (190°C) for 20-25 minutes until cheese is bubbly.
