- 1 bunch fresh sage (dried sage can substitute)
- 1 large head garlic (Lautrec pink garlic preferred)
- 2/3 cup olive oil (can use other vegetable oils)
- 1 large egg (separated)
- 1 teaspoon Dijon mustard (omit for milder flavor)
- a pinch salt (for seasoning)
- crusty croutons (adds texture)
- olive oil drizzle (for richness)
- smoked paprika (adds smoky flavor)
- fresh parsley (for garnish)
Instructions
- Heat 4 cups of chicken stock and add sage in a large pot. Simmer for about 5 minutes.
- Prepare the garlic by boiling it for 3-4 minutes until tender, then mash.
- Add the mashed garlic to the simmering stock and let it infuse for 10 minutes.
- Make the mayonnaise by blending egg yolk, mustard, and salt, then slowly add olive oil.
- If desired, strain the soup for a smoother texture.
- Temper the mayonnaise by mixing it with some hot soup before adding it back.
- Serve the soup in bowls and garnish with optional toppings as desired.
