  • 2 tsp orange zest
  • 1 cup powdered sugar
  • 2 tbsp cold milk

Instructions

  1. Preheat your oven to 350 degrees F. Prepare a muffin tin by greasing it or lining it with paper cups, and set it aside.
  2. In the bowl of your stand mixer, cream together the softened butter, softened cream cheese, and sugar using the paddle attachment until the mixture is light and fluffy. Incorporate the eggs one at a time, ensuring to beat well after each addition. Then, mix in the vanilla and almond extracts.
  3. In a separate bowl, combine the all-purpose flour, baking powder, and salt, whisking them together. Gradually stir the dry ingredients into the wet ingredients until just moistened, being careful not to over mix.
  4. Gently fold in the cranberries and orange zest. Divide the batter among the muffin cups, filling each about 3/4 full.
  5. Bake in the preheated oven for 20 to 25 minutes, or until they are lightly golden brown and a toothpick inserted into the center comes out clean. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
