- 2 cups Frozen Corn
- 1 can Creamed Corn
- 2 large Eggs
- 1 cup Sour Cream
- 1 tablespoon Sugar
- 1 teaspoon Coarse Kosher Salt
- 1 package (8.5 ounces) Jiffy Cornbread Mix
- 1 cup Crumbled Bacon
- 1 cup Shredded Cheese
- Diced Bell Peppers or Onions
Instructions
- Preheat your oven to 350°F (175°C). Spray a 9×9-inch baking dish with cooking spray.
- In a large mixing bowl, melt the butter and let it cool. Add corn, creamed corn, eggs, sour cream, sugar, and salt. Mix well.
- Gently fold in the Jiffy cornbread mix until no dry pockets remain.
- Pour the batter into the prepared baking dish and spread evenly. Bake for 35 to 40 minutes until golden brown.
- Allow the dish to cool for at least 15 minutes before serving.
