Ingredients

  • 2 cups Frozen Corn
  • 1 can Creamed Corn
  • 2 large Eggs
  • 1 cup Sour Cream
  • 1 tablespoon Sugar
  • 1 teaspoon Coarse Kosher Salt
  • 1 package (8.5 ounces) Jiffy Cornbread Mix
  • 1 cup Crumbled Bacon
  • 1 cup Shredded Cheese
  • Diced Bell Peppers or Onions

Instructions

  1. Preheat your oven to 350°F (175°C). Spray a 9×9-inch baking dish with cooking spray.
  2. In a large mixing bowl, melt the butter and let it cool. Add corn, creamed corn, eggs, sour cream, sugar, and salt. Mix well.
  3. Gently fold in the Jiffy cornbread mix until no dry pockets remain.
  4. Pour the batter into the prepared baking dish and spread evenly. Bake for 35 to 40 minutes until golden brown.
  5. Allow the dish to cool for at least 15 minutes before serving.
