Ingredients

- 1 lb Ground Beef (or turkey/meat alternative)
- 1 large Onion (yellow or white)
- 3 cloves Garlic (minced)
- 4 cups Beef Broth (or veggie broth)
- 14.5 oz Diced Tomatoes (canned with juice)
- 1 cup Corn (canned or frozen)
- 15 oz Black Beans (drained and rinsed)
- 2 medium Potatoes (diced small)
- 1 tbsp Smoked Paprika
- 1 tbsp Chili Powder
- 1 tsp Cumin
- 1 tsp Salt (to taste)
- 0.5 tsp Black Pepper (to taste)
- 1 cup Heavy Cream (or coconut milk)
- 1 cup Shredded Cheddar Cheese
Instructions
- In a large pot over medium heat, add a splash of oil and sauté the onion until soft, about 4-5 minutes. Add garlic and cook until fragrant (30 seconds to 1 minute).
- Add the ground beef (or meat alternative) to the pot, season with salt and pepper, and cook until browned.
- Mix in the beef broth, diced tomatoes, corn, black beans, and potatoes. Stir and bring to a boil.
- Add smoked paprika, chili powder, cumin, and remaining salt and pepper. Simmer for 20-25 minutes until potatoes are tender.
- Lower the heat and stir in the heavy cream (or coconut milk) and cheddar cheese until melted. Serve in bowls topped with extra cheese or herbs.
