Ingredients

  • 1 lb Ground Beef (or turkey/meat alternative)
  • 1 large Onion (yellow or white)
  • 3 cloves Garlic (minced)
  • 4 cups Beef Broth (or veggie broth)
  • 14.5 oz Diced Tomatoes (canned with juice)
  • 1 cup Corn (canned or frozen)
  • 15 oz Black Beans (drained and rinsed)
  • 2 medium Potatoes (diced small)
  • 1 tbsp Smoked Paprika
  • 1 tbsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Salt (to taste)
  • 0.5 tsp Black Pepper (to taste)
  • 1 cup Heavy Cream (or coconut milk)
  • 1 cup Shredded Cheddar Cheese

Instructions

  1. In a large pot over medium heat, add a splash of oil and sauté the onion until soft, about 4-5 minutes. Add garlic and cook until fragrant (30 seconds to 1 minute).
  2. Add the ground beef (or meat alternative) to the pot, season with salt and pepper, and cook until browned.
  3. Mix in the beef broth, diced tomatoes, corn, black beans, and potatoes. Stir and bring to a boil.
  4. Add smoked paprika, chili powder, cumin, and remaining salt and pepper. Simmer for 20-25 minutes until potatoes are tender.
  5. Lower the heat and stir in the heavy cream (or coconut milk) and cheddar cheese until melted. Serve in bowls topped with extra cheese or herbs.
