- 4 cups chicken broth
- 1 cup heavy cream
- 16 ounces potato gnocchi
- 2 cups fresh spinach
- Salt and black pepper to taste

Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat.
- Add the Italian sausage and cook until browned and crumbled. Remove excess grease if necessary.
- Add the diced onion and sauté for 3 to 4 minutes until softened.
- Stir in the minced garlic, Italian seasoning, and crushed red pepper flakes. Cook for another minute until fragrant.
- Pour in the chicken broth and bring the mixture to a gentle boil.
- Add the gnocchi and cook for about 3 to 5 minutes or until they float and are tender.
- Reduce the heat to low and stir in the heavy cream. Simmer for a few more minutes until the soup thickens slightly.
- Stir in the fresh spinach and cook just until wilted.
- Season with salt and black pepper to taste.

Notes
- You can substitute kale for spinach if you prefer a heartier green.
- For a lighter version, use half-and-half or whole milk instead of heavy cream, though the soup will be less rich.
