Description

A rich, hearty, and comforting one-pot meal featuring tender potato gnocchi, savory Italian sausage, and a creamy broth, perfect for chilly nights or easy weeknight dinners. This Creamy Italian Sausage Gnocchi Soup is flavorful and satisfying.

Ingredients

Scale
  • 1 pound Italian sausage, mild or spicy
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 3 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 16 ounces potato gnocchi
  • 2 cups fresh spinach
  • Salt and black pepper to taste
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the Italian sausage and cook until browned and crumbled. Remove excess grease if necessary.
  3. Add the diced onion and sauté for 3 to 4 minutes until softened.
  4. Stir in the minced garlic, Italian seasoning, and crushed red pepper flakes. Cook for another minute until fragrant.
  5. Pour in the chicken broth and bring the mixture to a gentle boil.
  6. Add the gnocchi and cook for about 3 to 5 minutes or until they float and are tender.
  7. Reduce the heat to low and stir in the heavy cream. Simmer for a few more minutes until the soup thickens slightly.
  8. Stir in the fresh spinach and cook just until wilted.
  9. Season with salt and black pepper to taste.
  10. Serve hot, topped with grated Parmesan cheese if desired.

Notes

  • You can substitute kale for spinach if you prefer a heartier green.
  • For a lighter version, use half-and-half or whole milk instead of heavy cream, though the soup will be less rich.
  • If you like a thicker soup, mash a few of the gnocchi gently with the back of a spoon before adding the cream.
  • Leftovers can be stored in the fridge for up to 3 days. Reheat gently over low heat, adding a splash of broth or cream to loosen if needed.
