Description

Creamy Rotel Pasta with Ground Beef is a hearty, quick meal that combines flavorful ground beef with tender pasta in a creamy sauce.

Ingredients

Scale
  • 1 pound Penne Pasta
  • 2 tablespoons Olive Oil
  • 1 pound Ground Beef
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 10-ounce can Rotel Tomatoes
  • 1 cup Beef Broth
  • 1 cup Heavy Cream
  • 4 ounces Cream Cheese
  • 1 tablespoon Worcestershire Sauce
  • 1 teaspoon Chili Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano
  • 2 cups Shredded Cheddar Cheese
  • 1 cup Fresh Cilantro or Parsley

Instructions

  1. Bring a large pot of salted water to a boil. Cook penne pasta according to package instructions until al dente, about 9-11 minutes. Drain and reserve some pasta water.
  2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and diced onion. Sauté for 5-7 minutes until browned and onion is translucent.
  3. Stir in minced garlic and cook for an additional minute until fragrant.
  4. Add Rotel tomatoes, beef broth, heavy cream, cream cheese, Worcestershire sauce, and spices to the skillet. Simmer for about 5 minutes, stirring occasionally.
  5. Lower heat to medium-low, add shredded cheddar cheese, and stir until melted.
  6. Add cooked penne pasta to the skillet, tossing to coat. Adjust sauce consistency with reserved pasta water if needed.
  7. Remove from heat and serve warm, garnished with fresh cilantro or parsley.

Notes

  • Feel free to use your favorite pasta type.
  • You can opt for ground turkey for a lighter dish.
  • Substitute with shallots or leeks if preferred.
  • Use vegetable broth for a lighter alternative.
  • Omit Worcestershire sauce for a gluten-free option.
  • Try Monterey Jack or Pepper Jack for a spicy twist.
