Ingredients

- 2 cups mixed vegetables (carrots, celery, potatoes, etc.)
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream (or milk)
- 1 cup shredded cheese (cheddar or choice)
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Toss in the onion and garlic, sauté until translucent.
- Add the mixed vegetables and cook for a few minutes.
- Pour in the vegetable broth and bring it to a boil. Reduce the heat and let it simmer until the veggies are tender (about 15–20 minutes).
- Stir in the heavy cream or milk and shredded cheese until melted and creamy.
- Season with salt and pepper to taste.
- Serve warm and enjoy, perhaps with some crusty bread.
