Description

Ingredients

  • 2 cups mixed vegetables (carrots, celery, potatoes, etc.)
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream (or milk)
  • 1 cup shredded cheese (cheddar or choice)
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Toss in the onion and garlic, sauté until translucent.
  2. Add the mixed vegetables and cook for a few minutes.
  3. Pour in the vegetable broth and bring it to a boil. Reduce the heat and let it simmer until the veggies are tender (about 15–20 minutes).
