Description

Ingredients

  • 2 medium-sized sweet potatoes
  • 3 tablespoons unsalted butter
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh rosemary, chopped
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a baking sheet by greasing it or lining it with parchment paper.
  2. Peel the sweet potatoes and cut them into uniform 1-inch cubes.
  3. Melt the butter in a mixing bowl, then mix in the Parmesan, parsley, rosemary, garlic powder, and a sprinkle of salt and pepper.
  4. Toss the sweet potato cubes in the herb butter until well-coated.
  5. Spread the coated sweet potatoes on the baking sheet in a single layer.
  6. Bake for 20 to 25 minutes, flipping halfway through, until golden brown and tender.
