Description
A warm and cozy slow cooker soup full of soft beef and fresh veggies. It is perfect for a simple and tasty weeknight dinner. ENJOY!!!

- 2 lbs chuck roast
- 1 tbsp olive oil
- 1 large onion
- 2 stalks celery
- 3 large carrots
- 1 lb baby potatoes
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 2 cloves garlic
- 1 tsp dried thyme
- 1 tsp garlic powder
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp Worcestershire sauce
- 2 tbsp fresh parsley (for garnish)
Instructions
- Cut the chuck roast into small pieces and add salt and pepper to all of them.
- Heat up the olive oil in a pan and cook the beef until it looks golden and nice.
- Take the beef out and put the onion and celery in the same pan until soft.
- Put the beef and the onion mix into your slow cooker in a nice, even layer.
- Pour the beef broth and the diced tomatoes with all the juice into the slow cooker.
- Add the carrots, potatoes, garlic, thyme, and garlic powder into the slow cooker now.
- Put the lid on and cook on low for 7 hours or on high for 4 hours.
- Stir in the Worcestershire sauce, taste it, and put fresh parsley on top before serving.
