Description

A vibrant and healthy Crunchy Cabbage and Edamame Salad with a flavorful sesame ginger dressing. Quick, easy, and perfect for any occasion!

Ingredients

Scale
  • 1/2 cup shredded green cabbage
  • 1/2 cup shredded red cabbage
  • 1 cup shelled edamame, cooked
  • 1/2 cup shredded carrots
  • 1/4 cup sliced green onions
  • 1/4 cup chopped cilantro
  • 1/4 cup toasted sliced almonds
  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. In a large bowl, combine the shredded green cabbage, red cabbage, cooked edamame, shredded carrots, sliced green onions, and chopped cilantro.
  2. In a dry skillet over medium heat, toast the sliced almonds until they are lightly golden and fragrant, about 3-5 minutes. Add the toasted almonds to the salad bowl.
  3. In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, honey, grated ginger, minced garlic, and red pepper flakes (if using) until everything is well combined.
  4. Pour the sesame ginger dressing over the salad and toss gently to ensure all the ingredients are evenly coated.
  5. Let the salad sit for at least 10 minutes to allow the flavors to meld together.
  6. Serve the Crunchy Cabbage and Edamame Salad chilled.

Notes

  • Make it Vegan: Substitute honey with maple syrup or agave.
  • Storage: Store salad and dressing separately to prevent sogginess.
  • For extra flavor, toast your sliced almonds in a dry pan over medium heat until lightly golden and fragrant.
  • When buying fresh ginger, choose pieces that are firm and smooth.
  • Fresh cilantro is best found at local farmer’s markets or well-stocked grocery stores.
