The Enchirito That Grandma Asked For Twice is a comforting dish featuring soft tortillas stuffed with ground beef, creamy refried beans, and zesty enchilada sauce, topped with gooey cheese.

- 1 lb ground beef (80/20 blend)
- 1 packet taco seasoning (or 2 tbsp homemade)
- 1 can (16 oz) refried beans
- 1 can (10 oz) red enchilada sauce
- 6 large flour tortillas (about 10″ diameter)
- 2 cups shredded cheese (Monterey Jack and cheddar blend)
- 1/2 cup diced white onions
- 1/4 cup chopped fresh cilantro
Instructions
- Preheat your oven to 350°F (175°C).
- Brown the ground beef in a skillet over medium heat, breaking it up until no pink remains (about 5-7 minutes).
- Drain excess grease, leaving a teaspoon for flavor. Stir in taco seasoning with 3/4 cup water and simmer for 5 minutes.
- Warm refried beans in another pan until spreadable.
- Spread 2 tablespoons of beans on each tortilla, add beef mixture, sprinkle with cheese, roll tightly, and place seam-side down in a baking dish.
- Pour enchilada sauce over the rolled enchiritos and sprinkle with remaining cheese.
- Bake for 20 minutes until cheese is melted and bubbly.
- Let rest for 5 minutes, then garnish with fresh onions and cilantro before serving.
