- 1/2 cup (120ml) pumpkin puree
- 1 cup (240ml) milk
- 2 large eggs
- 2 tablespoons (25g) sugar
- 1 teaspoon (2g) pumpkin pie spice
- 1/2 teaspoon (2.5ml) vanilla extract
- 8 slices bread (challah, brioche, or your favorite)
- 2 tablespoons (30g) butter, for cooking
- 1/4 cup (30g) chopped pecans
- 2 tablespoons (30ml) maple syrup
- Powdered sugar, for dusting (optional)
Instructions
- In a large bowl, whisk together the pumpkin puree, milk, eggs, sugar, pumpkin pie spice, and vanilla extract until well combined.
- Heat a large skillet or griddle over medium heat. Add butter and let it melt.
- Dip each slice of bread into the pumpkin mixture, ensuring both sides are coated. Allow excess mixture to drip off.
- Place the soaked bread slices onto the hot skillet and cook for 2-3 minutes per side, or until golden brown and cooked through.
- Remove the French toast from the skillet and place on a serving plate.
- Top with chopped pecans and drizzle with maple syrup.
- Dust with powdered sugar, if desired.
- Serve immediately and enjoy!
