  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1 cup fresh corn kernels (about 2 ears)
  • 1 cup cooked chickpeas, drained and rinsed
  • 1/2 cup diced red onion
  • 1/2 cup diced bell pepper
  • 1 avocado, diced
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 1/2 cup plain yogurt
  • 1 tablespoon lime juice
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Brush both sides of each corn tortilla with olive oil and sprinkle with salt.
  3. Place the tortillas on a baking sheet in a single layer.
  4. Bake for 8-10 minutes, flipping halfway through, until they are crispy and golden brown.
  5. In a large bowl, combine the fresh corn kernels, cooked chickpeas, diced red onion, diced bell pepper, diced avocado, and chopped cilantro. This is your corn chickpea topping.
