  • 1 tsp table salt (to fine-tune seasoning)
  • 1/2 tsp black pepper (freshly ground, adjust to taste)
  • 1/4 cup chives (fresh, chopped)
  • 4 oz cream cheese (for creamier texture)
  • 1/4 cup nutritional yeast (for cheesy flavor)
  • 1 tsp roasted garlic (for deeper flavor)
  • 1/4 tsp cayenne pepper (for added spice)

Instructions

  1. Begin by cutting a large head of fresh cauliflower into 2-inch florets. Rinse the florets under cold water to remove any debris.
  2. In a large pot, bring water to a boil and add the cauliflower florets along with 4-5 cloves of smashed garlic. Boil for 10-15 minutes, or until the cauliflower is very tender.
  3. Once cooked, carefully drain the cauliflower and garlic mixture in a colander. Let it sit for a few minutes to allow any excess water to evaporate.
  4. Return the drained cauliflower and garlic to the pot. Using an immersion blender, purée the mixture until it’s completely smooth and creamy.
