- 1 large head cauliflower
- 4–5 cloves garlic (smashed)
- 4 tbsp unsalted butter (room temperature)
- 1/2 cup heavy cream (or coconut milk for dairy-free)
- 1 tsp kosher salt (adjust to taste)
- 1 tsp table salt (to fine-tune seasoning)
- 1/2 tsp black pepper (freshly ground, adjust to taste)
- 1/4 cup chives (fresh, chopped)
- 4 oz cream cheese (for creamier texture)
- 1/4 cup nutritional yeast (for cheesy flavor)
- 1 tsp roasted garlic (for deeper flavor)
- 1/4 tsp cayenne pepper (for added spice)
Instructions
- Begin by cutting a large head of fresh cauliflower into 2-inch florets. Rinse the florets under cold water to remove any debris.
- In a large pot, bring water to a boil and add the cauliflower florets along with 4-5 cloves of smashed garlic. Boil for 10-15 minutes, or until the cauliflower is very tender.
- Once cooked, carefully drain the cauliflower and garlic mixture in a colander. Let it sit for a few minutes to allow any excess water to evaporate.
- Return the drained cauliflower and garlic to the pot. Using an immersion blender, purée the mixture until it’s completely smooth and creamy.
- Add room temperature unsalted butter, heavy cream, kosher salt, and black pepper to the smooth cauliflower mixture. Stir vigorously until incorporated.
- Gently fold in freshly chopped chives to the warm Garlic Mashed Cauliflower.
