- 2 tbsp unsalted butter, melted
- ¼ cup brown sugar

- ⅓ cup all-purpose flour
- ¼ cup brown sugar
- 2 tbsp unsalted butter, cold and cubed
- ¼ tsp cinnamon
- Pinch of salt
- For the Glaze:
- ½ cup powdered sugar
- 1 to 2 tbsp milk
- ½ tsp vanilla extract
Instructions
- Preheat your oven to 350°F and line two baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until fully incorporated.
- In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and cinnamon. Gradually add this dry mixture to the wet ingredients, mixing until just combined to form a soft dough.
- In a small bowl, stir together the melted butter, brown sugar, and cinnamon until a smooth paste forms for the cinnamon swirl.
- In another small bowl, combine the flour, brown sugar, cold cubed butter, cinnamon, and salt for the streusel topping. Use your fingers or a fork to create coarse crumbs.
- Scoop the cookie dough onto the prepared baking sheets using a medium cookie scoop. Slightly flatten each ball and press a small indent into the center.
- Spoon a small amount of the cinnamon swirl mixture into each indent and gently swirl it into the top of the cookie with a toothpick or the tip of a knife.
- Generously top each cookie with the streusel crumbs.
- Bake for 10 to 12 minutes, or until the edges are lightly golden and the centers are set. Let cool on the baking sheet for 2 to 3 minutes before transferring to a wire rack to cool completely.
- Once cooled, mix together the powdered sugar, milk, and vanilla extract in a small bowl until smooth to create the glaze. Drizzle the glaze over each cookie.
