  • For the Cinnamon Swirl:
  • 2 tbsp unsalted butter, melted
  • ¼ cup brown sugar
  • 1 tsp ground cinnamon
  • For the Streusel Topping:
  • ⅓ cup all-purpose flour
  • ¼ cup brown sugar
  • 2 tbsp unsalted butter, cold and cubed
  • ¼ tsp cinnamon
  • Pinch of salt
  • For the Glaze:
  • ½ cup powdered sugar
  • 1 to 2 tbsp milk
  • ½ tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F and line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until fully incorporated.
  3. In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and cinnamon. Gradually add this dry mixture to the wet ingredients, mixing until just combined to form a soft dough.
  4. In a small bowl, stir together the melted butter, brown sugar, and cinnamon until a smooth paste forms for the cinnamon swirl.
  5. In another small bowl, combine the flour, brown sugar, cold cubed butter, cinnamon, and salt for the streusel topping. Use your fingers or a fork to create coarse crumbs.
  6. Scoop the cookie dough onto the prepared baking sheets using a medium cookie scoop. Slightly flatten each ball and press a small indent into the center.
  7. Spoon a small amount of the cinnamon swirl mixture into each indent and gently swirl it into the top of the cookie with a toothpick or the tip of a knife.
  8. Generously top each cookie with the streusel crumbs.
  9. Bake for 10 to 12 minutes, or until the edges are lightly golden and the centers are set. Let cool on the baking sheet for 2 to 3 minutes before transferring to a wire rack to cool completely.
