- 1 cup warm water (about 110°F)
- 1 tbsp honey
- 2½ cups all-purpose flour
- 1 tsp salt
- ¼ cup olive oil, plus more for drizzling
- 3 cloves garlic, minced
- 1 tbsp fresh rosemary, finely chopped
- Flaky salt for topping
Instructions
- In a large mixing bowl, combine warm water, honey, and yeast. Stir gently and let sit for about 5 to 10 minutes until the mixture becomes foamy.
- Add flour, salt, and olive oil to the yeast mixture. Stir with a wooden spoon or use a stand mixer fitted with a dough hook until a soft dough forms.
- Knead the dough for about 5 to 7 minutes until smooth and elastic. If it’s too sticky, add a little flour. If using a mixer, knead on medium speed until the dough pulls away from the sides.
- Cover the bowl with a clean towel and let the dough rise in a warm area for 1 hour or until doubled in size.
- Preheat the oven to 375°F and grease a 12-cup muffin tin generously with olive oil.
- Punch down the risen dough and divide it evenly among the muffin cups. Press the tops lightly with your fingers to create dimples.
- In a small bowl, combine the minced garlic and rosemary with a few tablespoons of olive oil. Spoon or brush the mixture over each dough portion. Sprinkle a pinch of flaky salt on top of each muffin.
- Let the dough rest in the muffin tin for another 15 to 20 minutes before baking.
- Bake for 18 to 22 minutes or until the tops are golden and edges are crispy.
- Allow to cool slightly in the pan before removing. Serve warm or at room temperature.
