  • 2¼ tsp active dry yeast
  • 1 cup warm water (about 110°F)
  • 1 tbsp honey
  • 2½ cups all-purpose flour
  • 1 tsp salt
  • ¼ cup olive oil, plus more for drizzling
  • 3 cloves garlic, minced
  • 1 tbsp fresh rosemary, finely chopped
  • Flaky salt for topping

Instructions

  1. In a large mixing bowl, combine warm water, honey, and yeast. Stir gently and let sit for about 5 to 10 minutes until the mixture becomes foamy.
  2. Add flour, salt, and olive oil to the yeast mixture. Stir with a wooden spoon or use a stand mixer fitted with a dough hook until a soft dough forms.
  3. Knead the dough for about 5 to 7 minutes until smooth and elastic. If it’s too sticky, add a little flour. If using a mixer, knead on medium speed until the dough pulls away from the sides.
  4. Cover the bowl with a clean towel and let the dough rise in a warm area for 1 hour or until doubled in size.
  5. Preheat the oven to 375°F and grease a 12-cup muffin tin generously with olive oil.
  6. Punch down the risen dough and divide it evenly among the muffin cups. Press the tops lightly with your fingers to create dimples.
  7. In a small bowl, combine the minced garlic and rosemary with a few tablespoons of olive oil. Spoon or brush the mixture over each dough portion. Sprinkle a pinch of flaky salt on top of each muffin.
  8. Let the dough rest in the muffin tin for another 15 to 20 minutes before baking.
  9. Bake for 18 to 22 minutes or until the tops are golden and edges are crispy.
  10. Allow to cool slightly in the pan before removing. Serve warm or at room temperature.
