Ingredients

  • 1 lb Ground Beef (can be swapped for turkey or chicken)
  • 1 medium Onion (diced)
  • 2 cloves Garlic (minced)
  • 1 medium Green Bell Pepper (diced)
  • 1 can Green Chiles (diced)
  • 2 medium Potatoes (diced)
  • 1 tsp Ground Cumin
  • 1 tsp Dried Oregano
  • 1 tsp Paprika (smoked paprika recommended)
  • to taste Salt & Black Pepper (for seasoning)
  • 1 cup Beef Broth or Water (low-sodium recommended)
  • 2 tbsp Vegetable Oil (for sautéing)
  • to taste Fresh Cilantro (for garnish)

Instructions

  1. Heat 2 tablespoons of vegetable oil in a large skillet over medium heat. Add 1 diced onion and sauté for 3-4 minutes until translucent.
  2. Stir in 2 minced cloves of garlic and 1 diced green bell pepper into the skillet. Cook for another 2-3 minutes until the bell pepper is softened.
  3. Add 1 pound of ground beef to the skillet, breaking it up with a wooden spoon. Cook for 5-7 minutes until browned.
  4. Fold in 2 diced potatoes, 1 can of diced green chiles, 1 teaspoon of ground cumin, 1 teaspoon of dried oregano, and a pinch of salt and black pepper. Stir until well combined.
  5. Pour in 1 cup of beef broth or water and bring to a gentle simmer. Reduce heat, cover, and cook for 20-25 minutes.
  6. Taste and adjust seasoning if necessary. Allow the dish to sit off the heat for a few minutes before serving.
  7. Just before serving, sprinkle freshly chopped cilantro over the top and serve warm.
