- 1 1/2 pounds boneless, skinless chicken breasts, cut into 1 1/2-inch cubes
- 2 tablespoons olive oil
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon ranch seasoning mix
- 2 garlic cloves, minced
- 1/2 teaspoon onion powder
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
- Wooden or metal skewers
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- In a large bowl, combine olive oil, Parmesan cheese, ranch seasoning, minced garlic, onion powder, salt, and pepper. Add the chicken cubes and toss until fully coated. Cover and marinate for at least 30 minutes in the refrigerator, or up to 4 hours for deeper flavor.
- Preheat the grill to medium-high heat. Thread the marinated chicken pieces onto the skewers.
- Grill the skewers for 10 to 12 minutes, turning occasionally, until the chicken is fully cooked and has nice grill marks.
- Remove from the grill and let rest for a few minutes before serving. Garnish with fresh parsley if desired.
