Instructions
- Preheat your oven to 350°F (175°C). Line a cupcake pan with liners.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In a separate bowl, beat eggs, vegetable oil, buttermilk, and vanilla extract.
- Slowly add wet ingredients to dry ingredients, stirring until just combined. Do not overmix.
- Fill cupcake liners two-thirds full and bake for 18-20 minutes, or until a toothpick comes out clean.
- While cupcakes cool, warm jam in a small saucepan until slightly liquid. Let cool slightly.
- Once cupcakes are completely cooled, use a corer or knife to remove the centers.
- Spoon warm jam into the wells of the cupcakes.
- In a stand mixer, beat butter until creamy. Gradually add powdered sugar.
- Add heavy cream, vanilla extract, and red food coloring, mixing until fluffy.
- Frost the cupcakes generously with the red frosting.
- Garnish with fresh raspberries if desired.
