Ingredients
- 75g/3oz mixed dried fruit
- 150ml/5fl oz unsweetened apple juice
- 3–4 slices day-old white bread, cubed
- 1 teaspoon mixed spice
- 1 large banana, sliced
- 150ml/5fl oz milk
- 1 tablespoon Demerara sugar
Instructions
- Preheat the oven to 200°C/400°F/Gas mark 6. Put the dried fruit in a
small pan with the apple juice, and bring to the boil. - Remove the pan from the heat and stir in the bread cubes, mixed spice
and banana. Spoon the mixture into a shallow 1.2-litre/2pt ovenproof
dish and pour the milk over. - Sprinkle with the sugar, and bake for 25–30 minutes until firm and
golden brown. Serve hot or cold.
