Ingredients
- 1 pineapple, about 800g/13โ4lb
- 1 lime
- 1 tablespoon muscovado sugar
- 1 teaspoon ground allspice
Instructions
- Cut the pineapple lengthways into
quarters. Remove the hard core. - Loosen the flesh on each wedge by
sliding a knife between the flesh
and the skin. Cut the flesh into
slices, leaving it on the skin. - Using a sharp-pointed knife,
remove a few shreds of zest from
the lime. Squeeze out the juice. - Sprinkle the pineapple with the
lime juice and zest, sugar and
allspice. Chill for 1 hour and serve.
