Strawberries must be one of the most loved fruits worldwide, but they also make excellent
desserts, such as this flavorful and crumbly cake
Ingredients
- 1 1/2 cups all purpose flour
- 2/3 cup sugar
- 1/3 cup soy yogurt
- 1 teaspoon baking soda
- 2/3 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 cup soy milk
- 2 cups fresh strawberries, coarsely chopped
- 2 tablespoons cornstarch
- 1 pinch of salt
Instructions
- In a bowl, mix together the flour, sugar, baking powder and soda as well as a pinch of salt. Stir in the yogurt, vanilla and soy milk. Give it a good mix then pour the batter into a round 9 inch cake pan.
- Mix the strawberries with the cornstarch and sprinkle them on top of the batter.
- Bake the cake in a preheated oven at 350F for 40-50 minutes.
- When done, let it cool in the pan then transfer to a serving plate and sprinkle with powdered sugar.
