Carrot cake with walnuts tastes great because walnuts add a bit of texture, but also an earthy
flavor that pairs wonderfully with carrots.
Ingredients
- 10 dates, pits removed
- 2 cups grated carrots
- 1/2 cup sweetened applesauce
- 1/2 cup golden raisins
- 1 teaspoon cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 3/4 cup whole wheat flour
- 1/4 cup all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup walnuts, chopped
- 1 pinch of salt
Instructions
- Put the dates in a small blender or food processor and pulse a few times until a paste forms. Transfer them into a bowl then stir in the carrots, applesauce, raisins, cinnamon, ginger and a pinch of salt.
- Mix until well combined then fold in the flour, baking powder and soda. Spoon the batter into a greased round cake pan then sprinkle the chopped walnuts on top.
- Bake in a preheated oven at 350F for 30-40 minutes.
- Let it cool in the pan and serve sprinkled with powdered sugar.
