Ingredients
- 1/3 cup whole wheat flour
- 3/4 cup all purpose white flour
- 1/2 cup rolled oats
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1 pinch of nutmeg
- 1/2 cup agave syrup
- 3/4 cup canned pumpkin puree
- 6 oz firm tofu, well crumbled
- 1 teaspoon vanilla extract
Instructions
- In a bowl, mix together the flours, oats, baking soda, ginger, cinnamon, nutmeg and a pinch of salt.
- Stir in the agave syrup, pumpkin puree, crumbled tofu and vanilla extract. Mix until well blended.
