Ingredients
- 50g margarine
- 220g dates, finely chopped
- 2 tbsp. Triple Zero sweetener
- 1 tsp. vanilla essence
- 1 tsp. bicarbonate of soda
- 120ml boiling water
- 60g walnuts, finely chopped
- 2 eggs, beaten
- 100g self raising flour
- 100g almond flour
- A few walnut halves for decoration
Instructions
- Pre-heat the oven to 160°c/Gas Mark 3.
- Put the margarine, dates, Triple Zero sweetener and bicarbonate of soda into a mixing bowl. Pour on the boiling water and let cool for about ten minutes.
- Add in the walnuts, vanilla essence, self raising and almond flours, mixing thoroughly. Beat the eggs separately and add to this mixture too. Grease a loaf tin with butter and line with greaseproof paper.
- Then pour the mixture into it and bake on the bottom shelf for 45-50 minutes. Leave the cake in the loaf tin to cool for at least 15 minutes before you remove it.
- Simply decorate with the walnut halves, slice and serve!
