Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 potatoes, peeled and cubed
- 1 parsnip, diced
- 2 cloves garlic, minced
- 1 cup green lentils, rinsed
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat until shimmering.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the carrots, potatoes, and parsnip; cook for 5 minutes until softened.
- Add the minced garlic and cook for another minute until aromatic.
- Stir in the green lentils, vegetable broth, thyme, rosemary, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes until the lentils and vegetables are tender.
- Adjust seasoning to taste.
- Serve warm, garnished with fresh parsley.
