A magical combination of classic pot roast and French onion soup flavors, this dish is tender, juicy, and full of savory goodness.

- 3–4 pounds beef chuck roast
- 2 large onions, sliced
- 1 cup beef broth
- 1 packet onion soup mix
- 2–3 cloves garlic, minced
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh thyme or parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season the roast with salt and pepper, then sear it on all sides until golden brown.
- Place the sliced onions in the bottom of your slow cooker, then add the seared roast on top.
- In a bowl, mix together beef broth and onion soup mix, and pour over the roast.
- Sprinkle minced garlic on top.
- Cover the slow cooker and cook on low for 8-10 hours.
- Once done, shred the meat with two forks and mix with onions and broth.
- Garnish with fresh thyme or parsley before serving.
