- 1 cup shredded cheddar cheese
- 1 pound ground beef (or ground chicken/turkey)
- 2 tablespoons taco seasoning
- 4 pieces low-carb tortillas
- 1 cup sour cream (or Greek yogurt)
- 1 cup shredded lettuce
- 1 medium tomato (or bell pepper)
- 1 cup extra cheddar cheese
- 1/4 cup cilantro (or parsley)
- 1/2 cup jalapeño slices (optional)
- 1 tablespoon olive oil
Instructions
- Melt the butter in a non-stick skillet over medium heat.
- Add the ground beef and taco seasoning; cook until browned, about 5-7 minutes.
- Remove beef, then add cream cheese and heavy whipping cream to the skillet, stirring until smooth.
- Brush tortillas with olive oil and cook in a separate skillet for 1-2 minutes per side until golden and crispy.
- Layer fillings on a tortilla: beef, cheese sauce, sour cream, lettuce, tomato, cilantro, and extra cheese.
- Fold the edges of the tortilla inward to create a hexagon shape, then cook seam-side down in the skillet for 3-4 minutes per side until golden brown.
