- 2 medium Delicata Squash
- 2 tablespoons Olive Oil
- 1 teaspoon Sea Salt
- 1/2 teaspoon Black Pepper
- 1/4 cup Maple Syrup
- 1 teaspoon Thyme
- 1 teaspoon Smoked Paprika
- 1/2 cup Dried Cranberries
- 1/4 cup Toasted Pepitas
Instructions
- Preheat your oven to 400°F (200°C).
- Cut off both ends of the delicata squash and slice it in half lengthwise. Scoop out the seeds and cut into ½-inch thick half-moons.
- In a small bowl, mix olive oil, maple syrup, thyme, smoked paprika, sea salt, and black pepper. Pour over the squash and toss to coat.
- Spread the seasoned squash in a single layer on a baking sheet.
- Roast the squash for 20-30 minutes, stirring halfway through, until fork-tender and caramelized.
- Transfer to a serving platter and top with dried cranberries and toasted pepitas.
