Ingredients

  • 2 medium Delicata Squash
  • 2 tablespoons Olive Oil
  • 1 teaspoon Sea Salt
  • 1/2 teaspoon Black Pepper
  • 1/4 cup Maple Syrup
  • 1 teaspoon Thyme
  • 1 teaspoon Smoked Paprika
  • 1/2 cup Dried Cranberries
  • 1/4 cup Toasted Pepitas

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut off both ends of the delicata squash and slice it in half lengthwise. Scoop out the seeds and cut into ½-inch thick half-moons.
  3. In a small bowl, mix olive oil, maple syrup, thyme, smoked paprika, sea salt, and black pepper. Pour over the squash and toss to coat.
  4. Spread the seasoned squash in a single layer on a baking sheet.
  5. Roast the squash for 20-30 minutes, stirring halfway through, until fork-tender and caramelized.
  6. Transfer to a serving platter and top with dried cranberries and toasted pepitas.
