Ingredients

  • 4 large eggs
  • 4 ounces feta cheese, crumbled (113g)
  • 1/2 cup cherry tomatoes, halved (75g)
  • 1/4 cup Kalamata olives, pitted and halved (35g)
  • 2 tablespoons olive oil (30ml)
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish
  • Optional: red pepper flakes for heat

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Drizzle olive oil in oven-safe skillet. Sauté garlic for 30 seconds.
  3. Add tomatoes and olives. Season with oregano, salt, pepper. Cook 5 minutes.
  4. Crumble feta over tomato mixture.
  5. Create four wells; crack an egg into each.
  6. Bake for 12-15 minutes, until egg whites set.
  7. Garnish with parsley and red pepper flakes (if using). Serve immediately.
