Ingredients

  • 4 flour tortillas
  • 2 cups fresh spinach, chopped
  • 1 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato, diced
  • 1/2 red onion, thinly sliced
  • 1 tablespoon olive oil
  • Black pepper to taste

Instructions

  1. In a mixing bowl, combine shredded mozzarella, crumbled feta, chopped spinach, diced tomato, thinly sliced red onion, and black pepper. Mix well.
  2. Lay one flour tortilla flat on a clean surface, and place one-fourth of the filling mixture on one half of the tortilla.
  3. Heat a non-stick skillet over medium heat and add olive oil. Let it heat until shimmering.
  4. Carefully place the filled tortilla in the skillet. Cook for about 3-4 minutes until the bottom is golden brown and crispy.
  5. Flip the tortilla carefully using a spatula and cook the other side for another 3-4 minutes until both sides are crispy and golden brown.
  6. Remove the quesadilla from the skillet, transfer to a cutting board, and slice into wedges. Serve warm.
