- 4 flour tortillas
- 2 cups fresh spinach, chopped
- 1 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 small tomato, diced
- 1/2 red onion, thinly sliced
- 1 tablespoon olive oil
- Black pepper to taste
Instructions
- In a mixing bowl, combine shredded mozzarella, crumbled feta, chopped spinach, diced tomato, thinly sliced red onion, and black pepper. Mix well.
- Lay one flour tortilla flat on a clean surface, and place one-fourth of the filling mixture on one half of the tortilla.
- Heat a non-stick skillet over medium heat and add olive oil. Let it heat until shimmering.
- Carefully place the filled tortilla in the skillet. Cook for about 3-4 minutes until the bottom is golden brown and crispy.
- Flip the tortilla carefully using a spatula and cook the other side for another 3-4 minutes until both sides are crispy and golden brown.
- Remove the quesadilla from the skillet, transfer to a cutting board, and slice into wedges. Serve warm.
