Description

A delicious twist on classic deviled eggs infused with the vibrant flavors of Mexican street corn.


Ingredients

  • 6 hard-boiled eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon mustard
  • 1/2 cup corn (fresh, canned, or frozen)
  • 1/2 teaspoon chili powder
  • 1/4 cup cotija cheese (crumbled)
  • 2 tablespoons fresh cilantro (chopped)
  • Salt and pepper to taste
  • Lime wedges (for serving)

Instructions

  1. Slice the hard-boiled eggs in half lengthwise and remove the yolks.
  2. In a mixing bowl, mash the yolks and combine them with mayonnaise, mustard, chili powder, salt, and pepper.
  3. Stir in the corn, cotija cheese, and cilantro until well mixed.
  4. Spoon or pipe the yolk mixture back into the egg whites.
  5. Garnish with additional cotija cheese and cilantro, if desired.
  6. Serve with lime wedges on the side.
