A delicious twist on classic deviled eggs infused with the vibrant flavors of Mexican street corn.
Ingredients

- 6 hard-boiled eggs
- 1/4 cup mayonnaise
- 1 teaspoon mustard
- 1/2 cup corn (fresh, canned, or frozen)
- 1/2 teaspoon chili powder
- 1/4 cup cotija cheese (crumbled)
- 2 tablespoons fresh cilantro (chopped)
- Salt and pepper to taste
- Lime wedges (for serving)
Instructions
- Slice the hard-boiled eggs in half lengthwise and remove the yolks.
- In a mixing bowl, mash the yolks and combine them with mayonnaise, mustard, chili powder, salt, and pepper.
- Stir in the corn, cotija cheese, and cilantro until well mixed.
- Spoon or pipe the yolk mixture back into the egg whites.
- Garnish with additional cotija cheese and cilantro, if desired.
- Serve with lime wedges on the side.
