Description

Delightful protein balls featuring a refreshing blend of mint and chocolate, perfect for a quick snack or post-workout boost.


Ingredients

Scale
  • 1/2 cup (50g) rolled oats
  • 1 cup (240g) almond butter
  • 2 tbsp (42g) honey
  • 1/4 cup (30g) vanilla protein powder
  • 1/4 tsp peppermint extract
  • 1/4 cup (40g) mini dark chocolate chips
  • 12 tbsp (15-30ml) unsweetened almond milk (if needed)

Instructions

  1. In a large mixing bowl, combine rolled oats, vanilla protein powder, and mini dark chocolate chips. Stir to mix evenly.
  2. Add almond butter, honey, and peppermint extract to the dry mixture. Mix thoroughly until well combined.
  3. If the mixture is too dry, add almond milk, one tablespoon at a time, until the desired consistency is achieved.
  4. Gently fold in the mini dark chocolate chips by hand until evenly distributed.
  5. Scoop out about 1 tablespoon of the mixture and roll it into a ball using your hands. Repeat until all the mixture is formed into protein balls.
  6. Place the protein balls on a baking sheet lined with parchment paper and refrigerate for at least 20 minutes to firm up.
  7. Once set, transfer the protein balls to an airtight container for storage.
