Delightful protein balls featuring a refreshing blend of mint and chocolate, perfect for a quick snack or post-workout boost.
Ingredients

- 1/2 cup (50g) rolled oats
- 1 cup (240g) almond butter
- 2 tbsp (42g) honey
- 1/4 cup (30g) vanilla protein powder
- 1/4 tsp peppermint extract
- 1/4 cup (40g) mini dark chocolate chips
- 1–2 tbsp (15-30ml) unsweetened almond milk (if needed)
Instructions
- In a large mixing bowl, combine rolled oats, vanilla protein powder, and mini dark chocolate chips. Stir to mix evenly.
- Add almond butter, honey, and peppermint extract to the dry mixture. Mix thoroughly until well combined.
- If the mixture is too dry, add almond milk, one tablespoon at a time, until the desired consistency is achieved.
- Gently fold in the mini dark chocolate chips by hand until evenly distributed.
- Scoop out about 1 tablespoon of the mixture and roll it into a ball using your hands. Repeat until all the mixture is formed into protein balls.
- Place the protein balls on a baking sheet lined with parchment paper and refrigerate for at least 20 minutes to firm up.
- Once set, transfer the protein balls to an airtight container for storage.
